Shortbread Cookies

Ingredients: (Conversion Chart)

  • ¾ cup butter, unsalted
  • 1¼ cups confectioners' sugar
  • 4 egg yolks
  • 2 teaspoons vanilla extract
  • ¼ teaspoon salt
  • 3 cups flour

Directions:

  1. Preheat the oven to 325°F.
  2. With an electric mixer, beat butter until smooth, about 2 to 3 minutes. Gradually add confectioners' sugar and beat until mixture is fluffy.
  3. Beat in egg yolks, vanilla extract and salt.
  4. Stir in flour.
  5. Chill the dough for about 15 minutes, until firm enough to handle. Shape into 4 1½-inch logs and cover with plastic wrap; chill.
  6. When logs of dough are very firm, cut into ¼-inch thick slices and place slices 1 inch apart an ungreased baking sheet.
  7. Bake until very pale golden brown, about 8 to 10 minutes. Remove from baking sheet and let cool.
