Vietnamese Jackfruit Salad

Ingredients: (Conversion Chart)

  • 4 ounces lime juice
  • 4 chilli padi
  • 1 tablespoon Asian fish sauce
  • 2 tablespoons sugar
  • ½ teaspoon sesame oil
  • 17 ounces jackfruit, seeded and cut into ½-inch thick strips
  • 3½ ounces shallots, sliced thinly
  • 2 tablespoons chopped mint leaves
  • 1 tablespoon pan-toasted sesame seeds
  • 1 tablespoon toasted and coarsely chopped peanuts

Directions:

  1. Blend lime juice, chilli padi, fish sauce and sugar with sesame oil. Set aside.
  2. Place jackfruit strips, shallots, coriander and mint leaves in a bowl. Pour the blended dressing over and toss well.
  3. Serve with toasted sesame seeds and peanuts sprinkled over the salad.
