Chicken, Cheese & Rice Casserole

Ingredients: (Conversion Chart)

  • 1 (10 ounce) can condensed cream of chicken soup
  • 1 1/3 cups water
  • cup uncooked long-grain white rice
  • teaspoon onion powder
  • teaspoon ground black pepper
  • 2 cups frozen mixed vegetables
  • 4 skinless, boneless chicken breast halves
  • cup shredded Cheddar cheese

Directions:

  1. Preheat oven to 375F.
  2. Stir soup, water, rice, onion powder, black pepper, and vegetables in a 11" X 8" shallow baking dish.
  3. Top with chicken. Cover and bake in oven for 50 minutes, or until chicken and rice are done. Top with cheese. Let casserole stand. Stir rice before serving.
